2008 Minutes

January 7, 2008 The first Executive Meeting of the year was held at 3:30PM at the Kingfisher Resort and Spa. Due to time constraints we didn't have a general meeting, however with December's meeting being cancelled because of snow there was some fairly pertinent information discussed at the Executive Meeting that needed to be posted on the web site for our membership.


February 4, 2008 Held at the Malaspina College Cooks' training facilities in Powell River, baking instructor Xavier Bauby gave a workshop and demonstration on breadmaking, using some of the techniques and recipes he learned while in France last year on a scholarship provided by the NVICA.


March 3, 2008 Held at the North Island College in Campbell River, Board nominations were held and various events discussed.


May 5, 2008 Hosted by the Salmon Point Resort, this meeting featured a presentation on knives by a rep from F. Dick. A cookbook committee was formed to create a 30 year anniversary book.

2007 Minutes

February 5, 2007 Hosted by the Salmon Point Pub in Campbell River, we discussed the proposed new model for training and apprenticeship under the auspices of the North Island College as it relates to the industry and our Association. A new bursary draft proposal was discussed, as were various upcoming events including the Western Conference in Calgary, the Joint Meeting of B.C. chefs associations in May, and the Knorr Junior Competition on March 4th & 5th in which two NIC students will compete.


September 10, 2007 Hosted by Bruce Scheltgen of the Best Western Westerly in Courtenay, the members enjoyed three very interesting guest speakers. Jenny Macleod, Secretary of the District A Farmers Institutes, spoke about the loss of valuable ALR land to development, and the impact of the coming new B.C.meat regulations. Jan Peavoy of Dark Side Chocolates and Heather McWilliam also put on interesting and thought provoking presentations.


October 1, 2007 Held at the Campbell River Maritime Heritage Centre, Susan and Jeff Vandermolen gave a presentation on the beginning of their winery and vineyard in Courtenay. Graham Hawkins from the Victoria Chefs Association and Neptune Food Service was introduced and he updated information regarding the Victoria Chapter.


November 5, 2007 Our meeting was hosted by the Salmon Point Resort Restaurant in Campbell River. Klaus Fix and Alysa Ferguson brought samples of Unilever Foodsolution products to illustrate how their convenience products can help chefs in these days of labour shortage. Frank Moreland of Comox Valley Growers and Seed Savers Chair asked for an expression of our interest in, and support of, heritage and non-hybrid food crops.


December 3, 2007 Our meeting was scheduled to be held at the Avenue Grill in Courtenay following the Sunshine Lunch Club Annual Turkey Dinner. Unfortunately it was cancelled due to extreme weather conditions, and only chefs Bruce Sheltgen, Lesley Stav and James Street were able to get to St. Andrews Church to help out at the Turkey dinner. Everybody else was either snowed in or snowed out.

2006 Minutes

January 9, 2006 Comfort Zone (in Willow Point) was the site of our first meeting of 2006, We have come up with some new and exciting ideas for our meeting format this year. Most notably a joint chef retreat weekend in March with the Victoria Branch up here on North Island. Stay tuned....as we will have much more news about this and other planned events at our next meeting on February 06th!


February 6, 2006 Hosted by the Olde House in Courtenay, the members enjoyed a superb meal and two very interesting guest speakers. Meaghan Cursons of Comox Valley Tourism spoke about various possibilities for encouraging culinary tourism in the valley, and Richard Dreaky of Fat City Fuels spoke on recycling used cooking oils.


March 5 & 6, 2006 Combining our meeting with hosting Victoria Branch members for a 2 day event, we toured Whaletown Bay Oyster Farm on Cortes Island and Viking Bay Ventures Mussel Farm off Reed Island, then enjoyed a seafood barbecue on Cortes. The next day we toured the Natural Pastures Cheese Factory, enjoyed lunch at the Kingfisher and held a joint meeting where we discussed the future of our industry and sustainability issues.


April 3, 2006 Meeting at the North Island College in Campbell River, we were given an interesting presentation by Nancy Clements of the Vancouver Island Health Authority on food safety and other health issues relating to our industry. Then Hank Neury of the Plaza Bakery entertained us with an account of his travels to Honduras to help a local baker modernize and improve her operation.


September 11, 2006 Our first meeting after a very busy summer for all was held at the Salmon Point Pub in Oyster River. There was discussion on a joint NVICA/Victoria branch meeting, the Vancouver Island Chefs Competition in November at Camosun College, fundraising ideas, and integrating the Junior members into our association.

2005 Minutes

January 10, 2005 Our first meeting of the New Year, 2005 was a dinner hosted at the Kingfisher Spa and Resort. There were a fair number of us assembled and we touched on many topics. Our focus for this year is the “Latin Festival” fundraiser that we will hold in Campbell River in the month of May.


February 7, 2005 Meeting at the Salmon Point Resort, we discussed various items from the Chef of the Year nominations to the Latin Festival and upcoming Conferences.


March 7, 2005 Gathering at the Salmon Point Resort, we hosted guests from the Campbell River Rugby Club and the Pier Street Association representative who discussed the Campbell River Farmers' Market.


April 4, 2005 Meeting at the Coast Westerly Hotel, nominations were taken for the new Board, plans for the Latin Festival were discussed, and it was decided to send one delegate to the National Conference.


September 12, 2005 We assembled at the Driftwood Chinese Restaurant for a wonderful dinner and welcomed our guest speaker local Ken Jensen from Nature's Treats. President Ronald St.Pierre is planning to have a different guest sponsor as a new format for our monthly meetings this year.


October 12, 2005 About 15 of us gathered at the Kingfisher Resort and Spa for a workshop on wine and cheese tasting with guest speaker Jason Hyde from Peacock & Martin. It was very informative as well as enjoyable.


November 14, 2005 Tonight we were treated to a presentation of a meat processing plant from Carghill Foods. Afterwards we enjoyed a superb steak dinner sponsored by Neptune Foods and hosted by Chef Hansi at the Coast Discovery Inn in Campbell River.


December 5, 2005 We gathered at the Coast Westerly Hotel and were treated to a workshop on "What to do with Leftover Turkey" by Chef Bruce Sheltgen. Those participating and donating their time at the annual Salvation Army Christmas Dinner in Courtenay were acknowledged and thanked for their efforts.
